This one came to me as I was speaking to the farmers at Three Creeks, who told me that they should be getting the first crop of ripe heirloom tomatoes of the year! We chop them up with organic local jalapenos, cilantro, onions, and garlic, then make a tangy dressing with lime juice, greek yogurt, mayo, and a touch of olive oil for an incredibly fresh, delicious salad that would be incredible over rice, on a sandwich, in a wrap, or just eaten with a spoon! - The Chicken is not organic, nor is the yogurt or Mayo or Lime Juice!
