Can you tell that we have recently gotten a jolt of creativity? Not having to travel to Chicago and Indianapolis all the time has meant a lot more time in the kitchen, which means we’ve been revolutionizing our offerings and having a blast!
Bears Bagels makes some of the best bagels in the city, and they do it out of a tiny, tiny space which is even more impressive. The quality is insanely consistent, the flavor and texture is perfect, and we figured we needed to do something special to showcase their incredible products!
We start by growing our own sage, rosemary, and two different kinds of thyme. We chop that fine, along with honeycrisp apples for a little tartness and sweetness. Black pepper, roasted garlic, and a touch of brown butter bring the entire sausage together. We figured we might as well use duck eggs for a duck sausage sandwich, so we bake them low and slow until just done and still the tiniest bit jammy in the center.
You really, really need to order this. We only have enough sausage to make 70, so they’re gone when they’re gone.
