This dish is inspired by these last few wonderful days of warm weather and sunshine! We make a marinade for chicken breast with lemon juice, olive oil, fresh garlic, fresh rosemary and thyme, and shallots, then roast it to perfection. The potatoes are tossed with lemon zest, a tiny bit of olive oil, more fresh herbs, cracked black pepper and smashed garlic cloves, then roasted until golden brown on the outside and creamy on the inside. We’re pretty sure that this one’s going to be a big hit!
