NEW Honey Balsamic Marinated Chicken Breast, Quinoa, Green Beans

Seth and I worked together at Katzingers hundreds of years ago, back when everything was still steam powered and we used oil burning candles for light. I got a job there after high school (Dublin Scioto class of 04, baby!) because I was incredibly enamored with this honey balsamic dijon marinated chicken they had, and I had to learn how to make it. This is our interpretation, using really good balsamic vinegar, olive oil, a touch of dijon mustard, and real honey. We roast it to juicy perfection, and pair it with quinoa and green beans for an incredibly macro-focused and delicious meal!
