We’re really, really excited for this one. We found a great place to source delicious, lean Bison, so we’re giving it the made-from-scratch, Nonna Bolognese treatment! Do NOT be scared of Bison. It has a flavor very similar to beef, and is not gamey in the slightest. We saute sofritto in pure olive oil until tender and lightly caramelized, then add fresh garlic, a touch of tomato paste, and our Bison. Once that is lightly browned and cooked through, we add organic vegetable broth, a touch of milk, and herbs from our garden. Simmered to perfection, this one is rich, savory, filling, and packed with protein!
