One of my favorite things to order at asian restaurants is the pineapple fried rice. The tangy sweetness of the pineapple balances so well with the nuttiness of the cashews and the saltiness of the soy sauce that it’s tough to put down. We’re doing our best to bring you a slightly healthier version that uses way less oil and sugar, but still delivers a delicious treat. Our cashew sauce is made by simmering fresh garlic and ginger with GF soy sauce, a bit of mirin, a touch of organic cane sugar, and organic vegetable base together for an umami-packed flavor punch. We cook long-grain rice to perfection, and toss it with roasted pineapple and onions, steamed peas and carrots, a bit of GF hoisin sauce, and toasted cashews instead of frying it in a wok.
