NEW Filet Mignon Diane, Duck Fat Roasted Potatoes, Green Beans and Local Asparagus (Dairy)
Now that we know we found an excellent source of Filet Mignon for an affordable price, we’re going to be having a blast with it for awhile. Steak Diane is a famous steak dish that utilizes a sauce with caramelized shallots, roasted garlic, dijon mustard, cognac, mushrooms, and a touch of heavy cream. We’re going to use rehydrated shiitake mushrooms for a huge umami kick, and chop them super fine so folks with mushroom aversions due to texture wont know that they’re there. We’re going to use milk, made-from-scratch beef broth, and olive oil to streamline the macros… and so we can use just a tiny bit of duck fat to roast the Yukon gold potatoes with. The rendered Duck Fat provides a deep, mellow richness that is very delicious, yet very subtle.
