Simmering the peppers and tomatoes together really helps marry the flavors, and ties this whole dish together. We’ve decided to omit the parmesan cheese, as we already have a dairy dish on the entree menu this week and want to help our dairy-free folks as much as we can, but feel free to add a sprinkle of your own!
