WOAH! We’ve been trying to figure out how to incorporate more locally raised or grown products into our menu. We’ve been testing using local Amish chicken thighs, as their flavor and texture is incredible and they’re raised and processed right here in Ohio! They cost a bit more than twice as much as the chicken we’ve been using, but we’re only going to raise the price on this dish a dollar each. This is a play on a dish I used to make as a chef at a Taqueria in Chicago! We braise Chicken Thighs with crushed tomatoes, toasted chiles and spices, a bit of onion and garlic, and a touch of sweet and smoky chipotle chiles en adobo sauce for an incredibly delicious symphony of flavors!
