This is a play on a dish I used to make as a chef at a Taqueria in Chicago! We braise Chicken Thighs with crushed tomatoes, toasted chiles and spices, a bit of onion and garlic, and a touch of sweet and smoky chipotle chiles en adobo sauce for an incredibly delicious symphony of flavors! The Green Chile mashed pair perfectly with the corn salsa, and this one will warm you right up!
